<p>The Secret to Preparing the Perfect Paella</p>
<p>According to The American Heritage Dictionary of the English Language, paella is a saffron-flavored dish made with varying combinations of rice, vegetables, meat, chicken and seafood. The Dictionary also explains that in the Old French and Catalan languages, paella means frying pan or pot. The traditional paella pan is flat and of large diameter, it can also have handles on each side.</p>
<p>In fact, paella is one of the most versatile dishes to make. Paella also has the advantage of being great to clean out the fridge and use up leftover meats and vegetables. Any combination will eventually be great the secret is in the chemistry. Paella is a dish that is generally made to feed several people. Moreover, paella is quite flavorful the next day as the tastes have had time to mix together and become stronger.<br />

<p>This article is not a recipe but rather an outline that describes the three basic steps to follow to make a wonderful paella while leaving the reader (the chef!) the latitude to be creative and to make the dish their own by customizing it to their taste.</p>
<p>First the rice.</p>
<p>Select a type of rice that you are comfortable using. Feel free to experiment but know that paella contains a lot of ingredients and if you are unhappy with the end result with a particular type of rice, you might end up with a lot of waste. Basmati, brown or a mix with wild rice can add great taste and texture. Follow the instructions on the package with regards to washing and cooking the rice. Finely chop some onion, garlic and tomato. Heat a saucepan and add olive oil once the saucepan is hot (make sure that the oil does not start smoking. Burnt olive oil is carcinogenic and quite unhealthy). Once the oil is hot, throw in the uncooked rice. Frying uncooked rice gives it a nutty taste. Let the rice fry in the saucepan for a minute or so. Add the chopped onion, garlic and tomato until they soften, mixing constantly. Spice with saffron, salt and pepper. Feel free to experiment. Cumin, Cayenne various fine herbs or even a bit cinnamon or cloves can easily be added for a flavoring of your own. This mixture should not be on the stove for more that three to five minutes. At high heat with constant mixing, none of the ingredients should stick but they should mix well together and soften. Once all the ingredients are combined, remove the saucepan from the burner and mix in some frozen peas. Add enough peas to make a well balanced mixture.</p>
<p>Second the meat.</p>
<p>In a frying pan at high heat, brown some pieces of chicken. Upper thighs, drumsticks, breasts&#8230;it&#8217;s all good. Do not cook the meat completely but brown the outside. Once browned, set the meat aside. Lamb can also add great flavor to your paella.</p>
<p>Third combining it all.</p>
<p>Cover the bottom of the paella pan with the uncooked rice mixture. Add the browned chicken pieces on top. Add uncooked Merguez (spicy lamb sausages) and small fish filets rolled up and fastened with a toothpick or string. Use any type of fish but make sure that its flesh will hold well together. Pour some chicken broth on top (if the broth is warm the cooking time will reduce). Note that you can also add wine for more flavor. Cover the paella dish and cook for about 45 minutes at 350F or until the rice is cooked. At this point you can add raw shrimp or muscles and cook uncovered for another five minutes.</p>
<p>In short, the secret to preparing the perfect paella is to make it your own!</p>

<p>Tsp. = teaspoon<br />
Tbsp. = tablespoon, which equals 3 teaspoons<br />
C = cup.</p>
<p>Tip: Get a set of measuring spoons. The set will usually have 1/4 tsp., 1/3 tsp., 1/2 tsp., 1 teaspoon and 1 tablespoon.</p>
<p>Dry measure cups look like little saucepans and can be leveled off with a knife or other straight-edged tool. They come in sets like the measuring spoons. Liquid measuring cups have ounce marking lines so you can measure however many ounces you need.</p>
<p>Tip: Some recipes require exact measurements to turn out right so learn to measure correctly.</p>
<p>2. Common Ingredients</p>
<p>Make sure you know what you need.</p>
<p>Tips:</p>
<p>- Baking powder and baking soda are not the same.</p>
<p>- Ask the produce manager at the market about fruits and vegetables, the meat manager about cuts of meat.</p>
<p>- When trying something new, buy ONE. You can always go back for more if it turns out well.</p>
<p>3. Common Terminology</p>
<p>- Bake: Dry heat in the oven. Set oven control to the desired temperature while you&#8217;re preparing the dish to be baked. Once the light that says it&#8217;s heating turns off, the oven is at the proper temperature. Then put in the food&#8211;for best results, center it in the oven.</p>
<p>- Boil: Heat a liquid until it bubbles. The faster the bubbles rise and the more bubbles you get, the hotter the liquid. Some recipes call for a gentle boil&#8211;barely bubbling&#8211;or a rolling boil&#8211;just short of boiling over. Watch so it doesn&#8217;t boil over.</p>
<p>- Braise: A moist cooking method using a little liquid that barely bubbles on the top of the stove or in the oven. This is a good way to tenderize cheaper cuts of meat. The pan should be heavy and shallow with a tight-fitting lid to keep the liquid from boiling away. There&#8217;s a lot that can be done for flavoring in your choice of liquid and of vegetables to cook with the meat.</p>
<p>- Broil: Turn the oven to its highest setting. Put the food on broiler pan&#8211;a 2 piece pan that allows the grease to drain away from the food. In an electric oven on the broil setting only the upper element heats, and you can regulate how fast the food cooks by how close to the element you place it. Watch your cooking time&#8211;it&#8217;s easy to overcook food in the broiler.<br />
- Brown: Cook until the food gets light brown. Usually used for frying or baking. Ground beef should usually be browned (use a frying pan) and have the grease drained before adding it to a casserole or meat sauce.</p>
<p>- Fold: A gentle mixing method that moves the spoon down to the bottom of the bowl and then sweeps up, folding what was on the bottom up over the top. This is used to mix delicate ingredients such as whipped cream or beaten egg whites. These ingredients just had air whipped into them, so you don&#8217;t want to reverse that process by mixing too vigorously.</p>
<p>- Simmer: Heat to just the start of a boil and keep it at that point for as long as the recipe requires. The recipe will usually call for either constant stirring or stirring at certain intervals.</p>
<p>Now you are ready to do the shopping and prepare that recipe that you&#8217;ve always wanted to try!</p>

<p>Two of the most common &#8220;bad boys&#8221; of the plastic industry are PVC (polyvinyl chloride - a hard plastic) and phthalates, a group of substances added to PVC to make it softer and more pliable. In fact, phthalates are among the most common contaminants found in the human body. Another common chemical found in the kitchen is bisphenol-A, which is the main ingredient in hard plastic used in baby bottles, drinking water bottles, and plastic storage containers. Bisphenol-A is in the list of the top 50 chemicals, measured by production volume.</p>
<p>Here are some steps that you can take to decrease your family&#8217;s exposure to these chemicals.</p>
<p>- never heat foods or beverages in plastic containers; it is so easy to put a &#8220;microwaveable&#8221; plastic container into the microwave; don&#8217;t do it</p>
<p>- avoid plastic cling wrap products; most have phthalates in them</p>
<p>- avoid containers with PVC in them; if there is a &#8220;3&#8243; in the recycling triangle, get rid of it</p>
<p>- use glass or stainless steel drinking containers</p>
<p>- use ceramic or enamel plates</p>
<p>- use metal feeding utensils and metal kitchen tools</p>
<p>- do not store food or beverages in plastic containers, especially if the food item is acidic</p>
<p>- if you must use plastic, do not wash it in a dishwasher or use harsh detergents on it</p>
<p>It is interesting to note that in 2005 the European Union banned some commonly used chemicals of the phthalate family from use in toys. One commissioner was quoted as saying, &#8220;Toxic chemicals have no place in children&#8217;s toys&#8221;. Yet we continue to allow them in our food and beverage containers.</p>
<p>In North America, San Francisco instituted a ban in December 2006, although implementation has been delayed by a law suit. The ban covers biphenol-A and certain phthalates. This is commendable, but society needs more than city wide bans.</p>
<p>While we wait for our governments to realize the dangers, consider a personal ban. Can you make your kitchen plastic free?</p>

<p>If you have never grilled vegetables on your barbecue before, now is the time to start. It is easy to do and you will experience tastes only obtainable by grilling.</p>
<p>Here are some tips and techniques for preparing and grilling vegetables.</p>
<p>What vegetables are best for grilling?<br />

<p>Almost any vegetable can be grilled, obviously some grill better than others. Here is a list of vegetables that do especially well on the grill:</p>
<p>Corn on the cob, all types of peppers, Zucchini and summer squash, eggplant, asparagus, whole tomatoes, Portabello mushrooms, potatoes, artichokes, fennel, and whole onions.</p>
<p>How to prepare your vegetables for grilling.</p>
<p>For corn on the cob, peel the husks back a little over half way. Do not pull them off completely. Try to get most of the corn silk off, then pull the husks back up and tie them to the cob, then soak the whole ear in water for about an hour before setting over a hot fire on the grill.</p>
<p>You can also do this. When you take the cobs out of the water, untie them and brush them with a mixture of melted butter and chili pepper sauce, salt and pepper, then tie them back up and then put them on the grill. They are really good!</p>
<p>Zucchini should be washed thoroughly, ends trimmed off, then slice the Zucchini lengthwise in one-quarter inch thick slices. Brush with olive oil and place over a hot grill. They will not take long so keep and eye on them. Do not over-cook.</p>
<p>Asparagus can be rolled in olive oil, salt and pepper and placed across the grill and turned occasionally. They are great and again, do not over cook.</p>
<p>Eggplant should be sliced about half an inch thick, salted and placed in a strainer to drain. After about half of an hour, dry the slices with a clean paper towel and brush with olive oil and grill.</p>
<p>Artichokes should be halved lengthwise and placed in boiling salted water for about 15-20 minutes, then drained thoroughly. Brush the cut sides liberally with olive oil, salt and pepper and place cut side down over hot fire.</p>
<p>Whole bell peppers can be grilled till the skins blister and turn black. Then scrape or pull the blackened skin off, toss with olive oil and salt and pepper and enjoy. You can also do this with Anaheim chiles and Chiles Poblanos, also known as Ancho or Pasilla chiles.</p>
<p>Russet potatoes should have their skins cleaned thoroughly and dried. Then cook the potatoes in boiling salted water until only half cooked. Let them cool and cut into triangles lengthwise and spray with olive oil, place on hot grill, turning occasionally until brown and crispy.</p>
<p>You will notice that we have used olive oil in all the examples above but you can use peanut oil, walnut oil, or hazelnut oil if you wish. Canola or sunflower oils are just too bland for grilling.</p>
<p>Also, we have been grilling our vegetables directly on the grill but you can also use foil to construct a package for your vegetables. For example, slice a bell pepper and an onion, place in the middle of a large piece of foil, enclose the vegetables after dousing with olive oil and salt and pepper. Seal the package and place on the hot grill. It should be done in about 15 minutes.</p>
<p>You can also prepare a whole onion this way. Skin the onion, cut a cross from the top down three-quarters of the way through the onion, pour on some olive oil and wrap with foil, salt and pepper and put on the grill. Wallah!</p>
<p>There you have a few examples of the wonderful world of vegetable grilling. Now here are some more tips on grilling in general.</p>
<p>If you are going to buy a gas grill, be sure to get one with at least 40,000 to 50,000 BTU&#8217;s (British Thermal Units) as this will give you enough heat to make those attractive grill marks on your steaks, hamburgers and vegetables.</p>
<p>Vegetables generally are grilled over high heat, so when grilling with charcoal, build a 3-zone fire with the coals piled in a double layer on one side of the grill, then in a single layer in the center of the grill and then with no coals on the other side.</p>
<p>This lets you sear over the high heat of the double layer, cook over the moderate heat of the single layer, and keep your vegetables warm over the coal free zone.</p>
<p>You may want to invest in a vegetable tray. That is a tray with small holes that you can place onto the grill which will hold smaller vegetables like cherry tomatoes, garlic cloves or various sliced vegetables.</p>
<p>Another valuable accessory would be a fish basket. This eliminates the fish from sticking to the grill and flaking-up and falling through the grills.</p>
<p>Stock up with some bamboo skewers for small kebabs and chicken sate (Thai style chicken). To keep the skewers from burning just soak them in water for about an hour before using.</p>
<p>So there you are. This information should give you the confidence to begin grilling those vegetables for your next barbecue party.</p>
